Lingnan Culture: Fengcheng Dim Sum Training Programme

Lingnan dim sum, a treasured aspect of Chinese culinary culture, enjoys widespread popularity. To nurture the next generation with dim sum making skills and preserve its heritage, the Foundation collaborated with the Chinese Culinary Institute to organise the Lingnan Culture: Fengcheng Dim Sum Training Programme". From August 11th to 18th, 2024, over 30 students and teachers from the Institute participated in an intensive eight-day training at the Culinary Institute of Shunde Polytechnic 

During the training, participants mastered a variety of Shunde dim sum dishes, including Dragon and Lion shaped pastries, Shunde fish skin dumplings, chicken buns, Guangdong dumplings, and traditional Chinese pancakes. They also engaged in direct discussions with renowned culinary experts, gaining invaluable insights into the traditions and craftsmanship of Lingnan cuisine. These masterclasses provided an opportunity for participants to receive personalized guidance and enhance their culinary skills. 

The programme will culminate with a dim sum banquet and graduation ceremony in mid-November. Here, participants will demonstrate their newly honed skills by preparing dishes for the event, showcasing their proficiency in the art of dim sum making.
